To begin productiondeep in a region where conditions are extreme with the aim of proposing a unique coffee was a bold move, but Arnaud Caussehas overcome the challenge through hard work and perseverance.Grown amid a natural forest, his coffee thrives in the extreme conditions of its terroir. Very slow maturation under shade (from 9 to 10 months) and the high altitude of its terroir produce an exceptional cherry density. Coffee quality is preserved by harvesting in the dry season and drying the beans naturally.
This coffee is the result of 12 years'work spent testing and adapting to the terroir, which is composed of volcanic soils of a rare depth. It is a green coffee with a unique aromatic intricacy that can only be enhanced by an expert roaster.
