Dos Lagunas is a tropical paradise and a long-term project led by Adrian

Since we started, we were clear that an agroforestry system was the right approach. In this area, there is little cacao, and we lacked experience in identifying the right varieties - Adrian Rossi 

"With seven years of experience, we have specialized in ICS95 and TSH 565, which are varieties that adapt perfectly to the region. Our fermentation process is carefully controlled, and with cascade-shaped boxes, each with a capacity of 300 kilos, we have achieved excellent results. My team is led by Willbert, who already had experience with cacao, and today, in 2024, it consists of 10 full-time members entirely dedicated to cacao".

Regarding cacao, in 2017, Adrián decided to plant cacao, following a clear technique. He started with legumes and bananas to generate green manure. Once the soil was in optimal condition, 40 out of the planned 50 hectares were planted, with the goal of reaching the target by 2026.

The farm Hacienda Dos Lagunas

Hacienda Dos Lagunas is nothing short of impressive. Its name pays homage to the two volcanic lakes, Laguna Bonilla and Laguna Bollinita, which are surrounded by the estate. When it was acquired by Adrián's grandfather, it spanned 2000 hectares, but over the years, the property has been reduced to 400 hectares, distributed as follows: 100 hectares for cattle, 40 hectares for cacao, and 260 hectares for conservation areas. It is worth noting that Hacienda Dos Lagunas is located within the El Paso del Jaguar Biological Corridor, which connects the Central Volcanic Mountain Range with Barbilla National Park.

A few words about Adrian Rossi

Adrián, a specialist in sustainable agriculture and agroforestry, speaks with equal passion about both cattle and cacao. "The enemy isn't the cattle, but poor management," he says confidently. Since taking over the estate in 2017, Adrián has implemented rotational grazing techniques, leading to the recovery of degraded areas. As a result of good management practices, soil fertility has visibly improved.
