From coffee plants grown without chemical inputs

The soil is abundant in humus and organic matter, enriched with natural minerals that support a diverse array of rare soil microbes and fungi. Hoysala implements time-tested practices that combine organic and inorganic inputs, always mindful of their ecological footprint and the long-term sustainability of the plantation.

Ripe Harvested Fruit is first hand garbled to remove partially green cherries. The fruit is then washed clean with fresh spring water and passed through two siphons, to remove low density fruit. The cherries are first air dried on special trays – cold ambient air is blown through the beans to remove surface moisture.

The cherries are then spread on multi-level iron mesh to allow the sugars to caramalise. They are then moved to raised beds or heaped thick to slowly dry. They bagged at 12% Moisture.

Dried beans are stored in their cherry casing to rest & stabilize water activity. They are then dry milled, checked for density and graded according to size. Selected beans are first sorted according to colour and then garbled by hand, to remove defects. The beans are now stored in specially lined Jute bags till dispatch.

The terroir Baba Budan Hills

Baba Budan Hills is a region famous for growing coffee in southern India, in the state of Karnataka more precisely. This mountain range is part of the Western Ghats. It is in this area that we find the terroir of Chikmagalur, a traditional coffee growing area in India. In the 17th century, a Sufi saint Baba Budan would have introduced the coffee tree to India in this mountain area by bringing seven raw beans from the port of Mecca to Yemen while returning from a pilgrimage. The coffee trees are still growing and the region bears his name.
