All the coffees from the Santa Isabel farm are organic and grown in the shade of a highly protected ecosystem, without any chemicals, according to the principles of biodynamics. This demanding approach is essential for the Keller family, to preserve the purity of the soil and water sources for future generations.
At Santa Isabel, organic fertilisers are enhanced by biodynamic preparations made from cellulose, worm compost and manure. Adding to this already innovative approach is Alex's passion for experimentation, constantly perfecting his methods of anaerobic fermentation, washing and treatment of yellow and black honeys.
