About this cacao

This is the second year in a row that Finca La Catarina's cacao arrives in Europe.

One of our projects in 2023 in collaboration with Finca La Catarina is to develop a regular quality control through training of the team. The objective is to determine a sensory profile for each batch.

Cyrille, a perfectionist by nature, invests a lot to understand everything that is behind the flavor and quality of his beans. It is thanks to his efforts that Finca La Catarina has become a reference for quality and productivity in El Salvador.

The farm La Catarina

During the harvest season, operations are complex. The cacao beans from Finca La Catarina are harvested and sorted and then shipped to another property owned by Cyrille's family, La Alpina, which is an agroforestry coffee plantation. It is here that all the post-harvest processes take place (opening the pods, fermentation, drying, sorting, packaging, and storage). All these steps take place at the foot of the Chaparrastique volcano, which is still very active. ​

A few words about Cyrille Beraud

Cyrille has one hand in El Salvador and one in France. The one in France is refining his chocolate making technique with the idea of soon making his own bars and the one in El Salvador is on his farm. His team, led by agronomist Ely Baños, oversees production and water conservation and management, as well as the implementation of good agricultural practices. Another key member, Armando Guevara (pictured below left), is responsible for post-harvest practices, and this year he has established himself as an expert in fermentation and is also in charge of sorting the dry beans and packaging them, among so many jobs on the farm. ​
