This coffee, which is honey processed then dried on African beds, expresses the great complexity and expertise associated with Mauricio’s preparations.

Terroir Ataco

The terroir of Ataco is located in the famous volcanic mountain range Apaneca - Ilamatepec. Concepcion de Ataco is also a small town, known to the locals as the place of high springs. This region was the first to produce coffee in El Salvador. It now lists many large properties belonging to families of producers for several generations. It offers the cup such complexity and aromatic diversity that it is impossible to draw up a typical profile.

If you want to talk to an expert in microlots, Mauricio is the place to turn! Mauricio Sallaveria is as well known for his smile as for the care he puts into the post-harvest processes for each of his coffees. 

His high level of expertise enables him to supply a very wide range of coffees, skilfully juggling the different varieties and processes. When you taste his coffees, you'll sense a beautiful subtlety, whatever the farm: Villa Galicia, Finca Himalaya, Cruz Gorda or the El Divisadero and El Copo plots.
