Coffee produced on the Santa Isabel farm in Guatemala is a guarantee of organic coffee, grown and processed without the use of chemicals. Alex Keller, the farm's owner, is a demanding producer.
For him and his family, helping to preserve the purity and cleanliness of the soil and water sources for future generations is a priority.
Between the rows of coffee trees are pelibueyes (short-haired sheep), which help to renew the vegetation on the ground. Alex Keller has also set up a vermiculture programme to produce his own fertiliser.
The entire production of this coffee is managed in Santa Isabel, from cultivation to drying. Alex Keller also has its own roasting plant, so that it can push its quality control right to the end of the coffee chain, and test new fermentation and drying processes.
