About this coffee

Walter Peters' cascara is made from organic coffee produced according to biodynamic principles on his farm, Finca Irlanda. This cascara comes from natural coffees.

Most of the varieties used are resistant to coffee rust, related to the Catimor type. The cherry pulp was recovered from the best cherries of the harvest.

Walter Peters is one of the pioneers of biodynamic coffee growing in Mexico. While coffee pulp was originally used as fertiliser on the farm, Finca Ireland's production of cascara as a coffee co-product dates back to 2020.

The farm Finca Irlanda

The Finca Irlanda is located in the region of Chiapas, Soconusco terroir. Walter Peters initiated a new mode of production in the 1960s, organic and biodynamic production based on respect for living organisms, the development of animal and plant species in the region. Today, it is run by his son Alex, although Walter Peters still looks after the coffee trees with the same passion.

The farm is located at 1090 meters of altitude on 270 hectares of production and 50 of nature reserve. The cultivated varieties are maragogype, bourbon, caturra, catuai, geisha. The reserve is a real sanctuary, there are more than 50 species of trees, 200 birds, 800 plants, 87 spiders and 80 ants.

A foundation named Peters IAP has been created. It works to develop the medical and educational aspects of the area, it offers accommodation and free meals to the community.

A few words about Walter Peters

Walter Peters, with Finca Irlanda in Chiapas, is a pioneer of biodynamic farming. Finca Irlanda, which is now run by his son Alex but where he still spends a great deal of time producing coffee, was the first farm to be certified Demeter, at the end of the 1960s. In 1967, he was responsible for the first export of organic and biodynamic coffee to Europe.
