From the heart of Cauca: a blend born of tradition and innovation.

Crafted in the highlands of San Rafael near Popayán, this blend is the result of five farms united through the Federación Campesina del Cauca. Here, cherries are carefully fermented before sun-drying, preserving their vibrant flavors and ensuring consistency. More than just coffee, this process empowers small producers to protect their harvests, set fair prices, and elevate quality standards while honoring sustainable practices that respect both nature and community.

With over 25 years of adaptation in the region, the Colombia variety thrives under shade and biodiversity, delivering a cup that reflects resilience, balance, and excellence.

This blend comes from five farms in the village of San Rafael, near Popayán. The cherries are received and processed at the central mill of the Federación Campesina del Cauca (FCC). What makes it unique is the fermentation process that takes place before sun-drying the whole cherries. Only the ripest fruits are carefully selected and dried under the sun, with a final stage of mechanical drying to stabilize humidity.

The FCC’s central mill has been transforming the dynamics of coffee production in the region. It provides an opportunity for farmers to protect their harvests from spoilage and to standardize both quality and drying processes. Producers are paid for their cherries upfront, and once the coffee is sold, an additional premium is agreed upon to reward careful selection. Importantly, the producers themselves set the price, ensuring fairness and transparency.

From a logistical perspective, the process is more meticulous, guaranteeing consistent quality. From an environmental standpoint, it avoids the use of water and produces no waste.

The FCC encourages the cultivation of the Colombia variety because of its excellent cup profile, stable productivity, and adaptability to the territory. With more than 25 years in the region, this variety thrives under shade, integrates well with other crops, and consistently delivers both quality and resilience.

The region Cauca

The Cauca region, located in the south-west of Colombia, covers an area of 29,308 km², or 2.56% of the national territory. It has played an important role in the country's historical development, both economically and politically, from colonisation to independence in 1810. Home to some of Colombia's most impressive volcanoes, Cauca benefits from fertile and rich volcanic soil, making it a key region for coffee cultivation.

Socially, Cauca is one of the most complex departments in the country. Its territory was inhabited in pre-Hispanic times by various indigenous groups such as the Jamundies, Pances, Paeces, Calotos, Patías, Guambianos and Guanacas. Today, the western descendants live mainly in the capital, Popayan, while the indigenous peoples occupy the mountainous and remote areas.

Cauca is a leader in the production of high quality coffee. Thanks to its climate, its varied topography influenced by the mountain ranges that run through it, and the tradition and passion of its people, it is the fourth largest coffee producer in the country. It even ranks first in terms of the number of coffee-growing families, with more than 93,000 families cultivating 94,500 hectares of Arabica varieties (Castillo, Colombia, Caturra, Típica, Borbón and Tabí) in 34 municipalities. The coffee is grown on small plots by peasant, indigenous and Afro-descendant communities. Since 2011, Cauca coffee has had a denomination of origin that defines it as a coffee with strong caramel notes, high acidity, medium body, a clean, smooth cup with sweet, floral notes.
