Our 7 Jaguares coffee is an organic blend of different varieties: Typica, Bourbon and Caturra. It is grown in the south of the Chiapas region, in the Chicomuselo area and the mountains of Sierra Madre, at an altitude of 1700 metres above sea level.
It grows in the shade of native trees such as chalum, as well as various fruit and timber trees. The region's cool climate is ideal for the slow ripening of the cherries.
The growers apply organic cultivation practices: leaves from associated crops and waste water from the processes are deposited at the foot of the coffee trees to provide the plants with the necessary nutrients and retain soil moisture.
Once picked, the cherries are washed, as is the case for most coffees from this region. On the day of picking, the coffee is washed directly, before drying on concrete terraces and being turned over regularly to ensure even drying. The pulp collected is then used as compost on the farm's various plots.
