About this cacao

When Elmer planting cacao, it was by chance, his uncle gave him eleven pods, he planted the seeds and got his first 170 cacao trees. At the same time, they planted citrus and fruit trees. His entourage, surprised by the color and the large size of his beans, qualified his cacao as poor quality at the time. Elmer and his family never gave up, they then started to plant the trinitario variety and they also opened your own chocolate factory. Today, to his surprise, people admire his cacao criollo for the aromas and for the white beans.
« Today I can say that I live from my production and that cacao has changed my life."

The farm El Copinol Escondido

FCCO by Sail

Copinol Escondido is a small family-run farm in El Salvador, driven by a deep agricultural and environmental vision.

To reach it, one must walk nearly 40 minutes through waterfalls, cacao plantations, and tropical forest up to the mountain’s summit, where a majestic Copinol tree (Hymenaea courbaril) stands — the inspiration behind Elmer’s farm name.

At Copinol Escondido, sustainability is part of everyday life: continuous replanting of fruit trees, manual soil care, and organic fertilization maintain a healthy and productive ecosystem.

This natural approach results in high-quality cacao, grown with respect for the land and the rich biodiversity of the Salvadoran forest
