This coffee comes from Chiré Woreda, located in the Sidama region of Ethiopia, a region globally recognized for producing some of the most distinctive and high-quality Arabica coffees. The coffee is cultivated at elevations ranging from 1,900 to 2,100 meters above sea level, where the high altitude and cooler temperatures allow the cherries to mature slowly.
Chiré benefits from a unique microclimate, known locally as "Aliicho" or "Dega," characteristic of Ethiopia’s mountainous highlands. This cool and humid environment, combined with an annual rainfall of 1,200 to 1,599 millimeters and average temperatures between 15°C and 19.9°C, creates optimal conditions for coffee cultivation.
The region’s clay loam soil provides excellent drainage and nutrition, further contributing to the development of rich profiles in the beans. The coffee varieties grown in Chiré include the well-known Ethiopian selections 74158, 74110, and 74112, along with diverse heirloom cultivars that add to the complexity and heritage of the cup.
Coffee from this area is typically processed using the washed (wet) method. Once harvested, cherries are pulped, fermented, and then washed to remove mucilage before being carefully dried under the sun on raised beds.
