Grown organically in Guji's highlands

Slowly dried at our highland station, capturing Guji's essence.
The journey begins at Gerba Dogo coffee processing station, nestled in the heart of the Guji highlands. This is where the story of this exceptional bean is carefully guided. The coffee is grown on 50-hectare farm in Gerba Dogo, at altitudes ranging between 2100 and 2300 meters above sea level. Here, the soil is enriched naturally by organic compost from fallen shade tree leaves, free from chemical fertilizers. This natural environment is what gives Guji coffee its profound complexity.
After selective hand-picking, the ripe coffee cherries are delivered to Gerba Dogo station. Where dry processing method is implemented . The cherries are spread out on raised beds under the sun, where they dry slowly and uniformly for several weeks. This method requires constant, skilled rotation to ensure perfect, even drying without defect.
This coffee represents four decades of the Shonora family's dedication.

Coffee Name Guji

The origins of coffee in Guji go back several centuries, with wild varieties growing naturally in the region's forests. Local communities, mainly of the Oromo ethnic group, used coffee in their traditional practices long before it was commercially exploited.

For a long time, the Guji appellation was included in the Sidama appellation. In order to better distinguish the quality of the coffee produced here, this designation was separated by the Ethiopian authorities in the 2000s. This new designation makes it possible to refine the traceability of Ethiopian coffees and, above all, to better reflect their quality in terms of taste and typicality in the cup.

Today, the Guji appellation produces some of the finest coffees in the world. Coffee here is an ancient crop, grown on hilly plateaus in a dense forest or semi-forest environment, where the diversity of endemic species provides optimal shade for the coffee trees and contributes to the fertility of the soil.
