This coffee is grown in southern Mexico, on the Motozintla terroir in the mountainous region of Chiapas, at altitudes ranging from 1,200 to 1,320 meters. Coffee trees grow under shade, notably beneath Inga trees, helping to naturally regulate temperatures and preserve soil health.
Produced by Jorge Arreola Nava, this coffee is cultivated in accordance with the principles of organic agriculture, in a territory known for its mountainous landscape and climate well suited to coffee growing. The plots are managed with particular attention to maintaining the natural balance of the terroir, characteristic of coffees from Chiapas.
After harvest, the cherries are processed using a washed method. Drying is carefully carried out using a combination of patios and mechanical dryers, ensuring good stability while preserving the quality of the beans.
This organic washed coffee reflects the typical profile of coffees from Chiapas, a region in southern Mexico renowned for the quality and consistency of its production.
