The Unión de Ejidos y Comunidades San Fernando has been cultivating organic coffee in Chiapas since 1984, earning its first organic certification in 1989. In the last eight years, the cooperative has invested heavily in quality: cupping labs, processing workshops, and microlot identification programs that allow their best coffees to be sold at differentiated prices. This washed Tupi, grown between 900 and 1,650 masl across the Sierra Madre, expresses that commitment in the cup — with sweet maple syrup, hazelnut and dark chocolate, and a bright fruity layer of raisin, tangerine, and lime.

The team's opinion
A well-crafted washed coffee from a cooperative that has been doing serious work in Chiapas for a long time. The Tupi variety brings an interesting profile — structured, with good sweetness and a citrus brightness that gives it real personality. A producer with deep roots and a clear direction toward quality.
