The team's opinion

This coffee clearly expresses the potential of the Marsellesa variety in Veracruz — a demanding cultivar that requires exceptional soil fertility and careful agronomic management, but in the right hands delivers something truly distinctive. Roque's experience and commitment to his land make that possible.
The Honey process adds a layer of sweetness and texture that sets this lot apart: the fermentation profile brings out notes of red fruits and ripe stone fruit, giving it a character that stands out even within specialty-processed Mexican coffees. A representative coffee from a farm fully committed to quality, sustainability, and the exploration of new varieties.
What we loved was the elegant combination of honey and raw cane sugar sweetness alongside a round, refined acidity. What surprised us was the cup cleanliness and aromatic definition this coffee maintains despite the Honey process — something that speaks directly to Roque's processing precision.
A coffee that brings together a modern variety, an experienced producer, and one of Mexico's most recognized terroirs. Not one to miss.
