Farm

Cecilia Vazquez
Aldama

About

Cecilia is a micro-producer whose main income is coffee. Like many people from the Mayan community and from the Tzotzil ethnic group, she also raises cattle and cultivates some vegetables. Its plots are tiny, like its production and that's why producing a high quality coffee is essential, to be profitable. Cecilia grows several varieties of coffee and usually fully washed processed. This harvest is the first natural processed and gives excellent results. Cecilia is part of the Cafeologo project "2019 harvest of the Aldama community". This project was created by Jesus to integrate the micro-producers of the locality of San Pedro Cotsilnam with which he works since 2010. In this "community-based mico mill", the coffee growers deliver their cherries and all the processes are centralized. Producers are trained in post-harvest methods, quality is homogenized and knowledge is pooled.
