Las Flores
Acevedo

About

Las Flores is located in the San Isidro Vereda, between 1700 and 1750 metres above sea level. The property seems to float in mid-air above chain of green valleys. The house is painted in bright colours: its exterior walls are the colour of an overripe papaya. It is designed to be an integral part of the post-harvest process: the family's coffee is dried on the roof.

At the peak of the harvest, Don Edilberto can accommodate 18 pickers. Most of the workers come from the neighbouring veredas, but he has seen an increase in the number of skilled pickers from the coffee-producing departments of Nariño and Cauca. Once picked at the peak of ripeness, the cherries are transported by cable car to the beneficiadero. After 24 hours of fermentation in sacks, the cherries are crushed and dry fermented for 60 hours. The coffee is then washed and dried for 15 days on the- roof of the family's house.
