About

La Finca Monteverde is a 14 hectare farm, located at an altitude of 1800m, where the Gutiérrez family cultivates the varieties Bourbon red and yellow, Geisha, Wush Wush and Mokka. There are 2 harvests per year, the main one from October to December and the mitaca from April to May. The classic farm preparation process is a selective harvest at optimum maturity and a controlled fermentation process of up to 36 hours which gives the coffee unique spicy notes. The Gutiérrez family reproduces this fermentation technique as in the culture of Yemeni coffee in Antiquity. Drying is done under greenhouses, ensuring that air flows keep temperatures low. This stage lasts an average of 25 days, the coffee is then packaged in grain Pro and fique bags when the humidity reaches 10.8%.
