About

LECHUZA project After many years of producing coffee on his farm, Cesar started to buy coffee from his neighboring producers, he then integrated a roastery and launched a coffee shop. It is therefore a global project that revolves 360 degrees around coffee, from farm to cup and cupping as well because Cesar is also Q-Grader. FARMS: The project therefore brings together 3 farms: - The Finca El Jardin de Pacamara which, as its name suggests, produces exclusively Pacamara variety under shade and at 1330 masl. - El Limon Estate which also produces Pacamara under shade, but this time at an altitude of 1650 meters. The aromas tend more towards a nice citric acidity. - The Finca Lechuza where the varieties Pacamara, Geisha and yellow Bourbon are cultivated over more than 3 hectares and under shade. SHADE: All the coffee trees from the 3 farms of the Lechuza project grow under a wide variety of shade trees (more than 40 different species), most of them fruit trees (Ingas, guamas, bananas, orange trees, lemon trees, mandarin trees, matasano, bamboo, avocado, lychee chinensis, yucca, Spanish plum, mango, sapot ...). There are also many trees that serve as wind brakers like the Copalchi. PROCESS: Cesar pays great attention to processes and his Q grader expertise allows him to refine and create very precise aromatic profiles in cup. The harvest takes place from December to February and the picking is manual and selective. The specificity of the Lechuza project is that all coffees are natural or honey produced with a high quality in cup using as little water as possible. All coffees go through a maceration stage, from 12 to 72 hours depending on the weather. The coffees all dry on African beds at the Finca Lechuza at 1250 masl under ideal drying conditions between October and March: strong winds and little or no rain. Cesar initiated this project to tend towards new agricultural practices, more respectful of the incredible volcanic soil of Santa Ana and of the processes that limit the use of water in the region.
