Lorenzo Nuñez
Chilon

About

Don Lorenzo is a Mayan micro-producer, belonging to the Tzotzil ethnic group. He cultivates Typica and Bourbon and his coffees are characterized by an extremely clean and precise cup with well-defined flavours. He is convinced that the improvement of coffee production depends on the search for new varieties adaptable to his region and his son Pablo is passionate about post-harvest processes. Don Lorenzo makes all the stages of his production by hand in a traditional way. The only machine he uses is a depulper. He sometimes uses cooking utensils! His plantation is over 30 years old and he is starting a project to renovate his coffee trees. In 2018, Lorenzo won first prize in the Cafealogia contest, which marked the beginning of his collaboration with Jesus. His farm is located in a remote area of Chiapas, Tzajala, terroir of Chilon. His production, so isolated, gives him many challenges but also new opportunities. With the help of his son, his interest in new varieties and processes, Don Lorenzo and his family are moving forward. Their goal is to develop more and more microlots and nanolots.
