Pedro Vazquez
Aldama

About

Pedro Vazquez is specialized in organic production. His production philosophy is based on quality and sustainability. Pedro has 10 plots planted with local varieties. This microlot was cultivated by Pedro and processed by Jesus from Cafeologo on the roof of his Cafeologia in San Cristobal de las Casas. Cherries are anaerobic fermented and dried on african beds under semi-shaded for 40 days below 20 °C. Pedro is the first coffee grower in the region to process natural coffees with such a level of quality. Pedro and his family are a role model to follow as coffee growers. Even if they own less than 4 hectares, their production is disciplined, innovative, based on quality control, the analysis of the results with a strong sustainable conscience in harmony with the development of this family activity. They are a shinning example for the Cafeologo project. The eldest son runs the local community washing station created this year and the family takes care of the Cafeologo varietal garden.
