Pillcocaja
Santa Isabel

About

The name Pillcoaja is of pre-Columbian origin and means "the rock of the birds", which comes from the farm's geographical location, right next to the Jocoto nature reserve, a non-governmental association dedicated to the protection and conservation of endangered bird species.

The Crespo family have been growing coffee here since 2010. Before the family moved here, the farm produced sugar cane for 150 years.

800m from the farm is a washing station, where the harvested cherries are processed. Once they have been pulped, the Crespo family and their team pulp them and ferment them for between 14 and 18 hours. The coffee then dries on raised beds in the shade for 16 or 22 days, depending on the humidity control.
