The San Pablo de Fernando Lima farm is located at an ideal altitude for coffee production, above 1800 masl. It is surrounded by two national parks, Los Andes and Los Volcanes, on the slopes of the Ilamatepec volcano, the highest in El Salvador, which erupted in 2006 and deposited its ashes on the soil of the San Pablo finca, giving it something very special.
The farm is run according to the principles of organic farming, and the distribution of shade on the farm makes it an example of a coffee forest, home to a wide variety of flora and fauna. The main variety grown on the farm is Bourbon. There is also a small amount of Caturra. Harvesting takes place at three different times between January and April, to guarantee uniform batches. And that's how it's been since 2010!
