Farm

Sitio da Liberdade
Espirito Santo

About

The property, which was once a pasture, now has 32,000 coffee trees, a depulper, two patios, two covered drying areas with African beds and ventilation. A spend a typical day on the farm, we follow Wellington. He gets up at dawn to go to the fields, Néia brings him his lunch and they eat together while discussing the daily operations of the farm. For them, every nook and cranny of the farm has something special. Every detail reminds them of anecdotes and stages in their lives that led them to name their farm Sitio da Liberdade (the Farm of Freedom): "Our freedom and independence are here, our lives are here". From the month of May, when they carry out soil analyzes until October-November, during the harvest, the work on the farm is intense. During the other six months of the year, they plan their investments for the next harvest. “We were saving so that we could invest in our farm. We must know how to plan and organize»(Néia). When we asked them what the next big step would be for Sitio da Liberdade, Wellington replied, “The next investment will be an environmentally friendly depulper to reduce our water consumption. Then we will plant another plot ?. Their ecological awareness is reflected in the way they work in the fields. They made the decision to invest in a depulper because : “We depend on this land, we cannot afford to degrade it. Humans have occupied far too many things that are not theirs. We must do our part to protect springs, limit our waste, stop deforestation, and avoid polluting water. This is our part. We care about everything in this place because it is what we are going to pass on to our sons ?. The harvest in Sitio da Liberdade is selective. The drying is done in two parts, at the beginning on the covered patios then on the concrete drying areas under sun. Special lots dry directly on african beds. The couple's greatest joy is to discover that their coffee, after being picked at its peak of ripening and carefully dried, results in a delicious cup. “We have the privilege of living in a land which favors the production of specialty coffees. We must take care of it, know how to take advantage of it and appreciate what this terroir offers to our cup ?.
