This coffee comes from the Veracruz region and is produced by our partner Don Pepe. Don Pepe Coffee is a local Mexican company located in the city of Huatusco that has been buying, processing and exporting coffee from small producers in the Veracruz region since 1994.
They work with Huatusco coffees, buying the coffee as cherries (unlike many processors who buy coffee already in parchment form), which allows them to effectively monitor product quality. All the coffees are processed at Huatusco, ensuring full traceability of the transformation process.
This coffee, produced on volcanic terroirs at altitudes of between 1,200 and 1,300 metres, is a fully-washed coffee, unlike many other Mexican coffees which are often simply "washed".
Produced from the Typica and Pluma varieties (a Typica mutation that occurred in the town of Pluma Hidalgo), this coffee has a profile quite similar to that of the Huehuetenango coffees in Guatemala.
It is worth noting that, for years, 85% of Mexican coffees were destined to 4 large agri-food groups, which prevented the country from improving the quality of its production. By working with Don Pepe, we are privileging a local Mexican partner, who is working to promote the industry and improve quality over the long term, while also ensuring total traceability for you, the consumer.
