The most important coffee-producing regions in Mexico are Chiapas and Veracruz. The second, Veracruz, is situated on a volcanic chain. The coffee trees are grown at its highest altitudes.
The term “Altura�? means that the plantations are located at altitudes of between 1,000 and 1,600 metres.
The region is known for its many springs, and its coffees are usually prepared by washing.
