This coffee is produced in Chiapas, terroir of Soconusco. The producer is Walter Peters, pioneer of biodynamic and organic coffee agriculture in the 1960s. This coffee is Demeter and biodynamic certified.

What is a biodynamic coffee?
Biodynamic production is based on the natural relationship between flora, fauna and its intrinsic environmental dynamics. Take advantage of the moon phases to establish the seasons of sowing and harvesting coffee, so that the product is optimal and fully integrated into the ecosystem. There is no clearing or pruning of the jungle; they integrate coffee trees into Soconusco as if they were born "wild", but monitored so that they develop to their full potential. Every certain time, water treated with medicinal plants in the area is applied to the coffee foliage to protect them from pests and improve photosynthesis, apart from sowing around each Camomila, Dandelion and Nettle plant, which help them in different ways. The result is a coffee of the highest quality and a production respecting its natural environment.

Die Plantage Finca Irlanda

The Finca Irlanda is located in the region of Chiapas, Soconusco terroir. Walter Peters initiated a new mode of production in the 1960s, organic and biodynamic production based on respect for living organisms, the development of animal and plant species in the region. Today, it is run by his son Alex, although Walter Peters still looks after the coffee trees with the same passion.

The farm is located at 1090 meters of altitude on 270 hectares of production and 50 of nature reserve. The cultivated varieties are maragogype, bourbon, caturra, catuai, geisha. The reserve is a real sanctuary, there are more than 50 species of trees, 200 birds, 800 plants, 87 spiders and 80 ants.

A foundation named Peters IAP has been created. It works to develop the medical and educational aspects of the area, it offers accommodation and free meals to the community.

Walter Peters, with Finca Irlanda in Chiapas, is a pioneer of biodynamic farming. Finca Irlanda, which is now run by his son Alex but where he still spends a great deal of time producing coffee, was the first farm to be certified Demeter, at the end of the 1960s. In 1967, he was responsible for the first export of organic and biodynamic coffee to Europe.
