<p>&nbsp;Colombia produces exclusively Arabica, because Robusta is neither supported nor authorized by the Colombian Coffee Growers Federation, the FNC. This means we cannot export Robusta because there can be no certificate of origin, and because no phytosanitary rules have been established for this type of coffee. Coffee production is the main source of employment in rural areas.&nbsp;</p>
<p>The coffee-growing regions are mountainous areas. 90% of producers have very small plantations (0.80 hectares on average). The average age of a grower is 53. Many producers practice mixed farming to diversify their income (chickens, eggs, etc.). Numerous local associations and cooperatives have been set up to help growers through the various stages of the supply chain: growing, harvesting, post-harvest processing, transport, packaging, projects and certification.&nbsp;&nbsp;</p>

<div>Colombia is located at the north-western tip of South America and covers an area of 1,141,748 km². It is bordered by the Pacific and Atlantic coasts. It is crossed from north to south by the Andes mountain range, which divides into three branches near its southern end: the Cordillera Occidental, the Cordillera Central and the Cordillera Oriental. To the east of the Cordillera Oriental lie the Orinoco river, the Llanos plain and the Colombian Amazon. Colombia’s other mountain ranges include the Serranía del Baudó and the Sierra Nevada de Santa Marta. Six of their summits stand higher than 5,000 metres. The different climates are determined by the amount of rainfall. In the plains and lowlands (situated at an altitude of less than 500 metres), the average temperature is 25 °C. The mountains and valleys located at altitudes of over 500 metres have a wide diversity of climates. They can be very humid, rainy, dry, and even very dry. The country’s size and geographical diversity partly explain the great aromatic diversity and the different harvest periods.&nbsp;</div>

<div>Huila has a long history of cacao production, but due to low prices, many farmers have abandoned their crops, or for decades they have destined their production exclusively for large national companies. In recent years, the situation in the village of Rivera in the Neiva region has changed, with access to the port of Buenaventura much more direct than in other cacao-producing regions such as Tumaco. This means that the cocoa is more sought-after and commands a slightly higher price.</div><div>A large proportion of the cacao grown in the region comes from clones promoted by Fedecacao (the national federation of Colombian cocoa producers) and Agrosavia (the Colombian agricultural research corporation) with the aim of achieving greater productivity by distributing varieties with genetic material offering better resistance to the two main diseases in the region (moniliasis and phytophtora).</div>

<div>The department of Huila is located in the southwest of Colombia. The region produces coffee of a quality that has amazed us in recent years.&nbsp;</div><div>Huila covers an area of 19,890 km², which is 1.74% of the country's total surface area. Huila is one of the most famous coffee producing regions in Colombia, it is part of the new Colombian coffee belt, with many young people involved in its production, curious about processes and new ways to go beyond the traditional fully washed Colombian coffee.&nbsp;</div><div>Incredible coffees can be found throughout Colombia, but the Huila region is notable for its quality and quantity. Its reputation is well established and many of the coffees from this region have won the Colombian Cup of Excellence. It is no coincidence that this region has been awarded a Denomination of Origin. The region has a wide variety of climates and soils, which allows the expansion of meat and agricultural production: bananas, corn, tomatoes, cocoa, sugar cane, cassava, onions, pineapples and blackberries.&nbsp;</div><div>Architecturally, the department of Huila is marked by history. The archaeological parks of San Agustin, Alto de Los Idolos and Alto de Las Piedras bear witness to its historical legacy and have been declared a UNESCO World Heritage Site since 1995. In pre Hispanic times, many indigenous tribes inhabited the region: the Pijaos in the north, the Andaquíes and Yalcones in the south, the Paeces in the west and the Tamas in the east.&nbsp;&nbsp;</div>

<p><span style="color: rgb(0,0,0);background-color: rgb(255,255,255);font-size: 16px;font-family: Calibri;">Since 2012, the Department of Huila and the municipality of Pitalito have been the leading coffee producers in Colombia. By 2018, Pitalito accounted for 2.2% of the national coffee production and 12.7% of the department's production. Located in the southeastern part of the Department of Huila, Pitalito lies within the Magdalena Valley and at the junction of the Central and Eastern Cordilleras, in the southern region of Alto Magdalena. It covers an area of 653 km², sits at an altitude of 1,318 meters above sea level, and has an average temperature ranging from 18 to 21°C. It has frequently been awarded the “Cup of Excellence.” The Valley of Laboyos is part of the Colombian Massif and the Andean Belt, which was designated a Biosphere Reserve by UNESCO in 1979. Its strategic location provides it with privileged environmental conditions, making it one of the municipalities with the highest number of properties acquired for the protection of micro-watersheds.</span>&nbsp;</p>

<p>The cherries are pulped and then fermented in water. Microbial activity breaks down the mucilage. After fermentation, they are washed in water to remove the remaining mucilage. The coffee is separated when it has a moisture content of 11%.</p>
