Amber is a tribute to the heritage, dedication, and vision that drive Café Primitivo. Grown at Farm Primavera in Quindío by producer Ana María Donneys, this Pink Bourbon lot represents the purest expression of a variety that has become central to the estate's identity. The trees were originally planted by Ana María's mother and have demonstrated, over the years, an exceptional ability to thrive under the farm's unique altitude and microclimate, consistently producing cherries of remarkable sweetness and complexity.
Beyond its remarkable cup profile, Amber tells the story of a continuous quest for quality and sustainability. This plot played an important role in the farm's transition from conventional fertilization practices to organic drench nutrition, reflecting a long-term commitment to soil health and ecosystem resilience. Meticulous orchard management throughout the year ensures healthy trees, balanced ripening, and optimal cherry development before harvest.
The harvest is carried out selectively every two weeks, allowing only perfectly ripe cherries to enter the process. After picking, the coffee undergoes density sorting and meticulous hand sorting prior to a controlled oxidation phase. The cherries are then fermented for 72 hours, depulped, carefully washed, and slowly sun-dried to reach the ideal moisture content. This precise approach preserves the intrinsic qualities of Pink Bourbon while enhancing clarity and elegance in the cup.
The result is a refined and expressive coffee with vibrant floral aromatics, a delicate fruity character, and remarkable clarity. Amber captures the harmony between family heritage, regenerative agricultural practices, and thoughtful processing, delivering a cup that is both sophisticated and deeply connected to its terroir.
