Nestled within the lush mountains of Pijao, Quindío, La Selva is a specialty coffee farm where exceptional coffee and environmental stewardship go hand in hand. Surrounded by native forests, streams, and remarkable biodiversity, the farm operates under a natural agroforestry system that protects the landscape while creating ideal conditions for coffee cultivation.
Produced by Juan Diego Restrepo and Germán Abdelnur, this Chiroso represents years of dedication to quality, continuous learning, and conservation. The variety was introduced to the farm a decade ago from Urrao, Antioquia, and has adapted beautifully to the high elevations of Pijao, developing a distinctive cup profile marked by florality, sweetness, and bright malic acidity.
The coffee grows between 1,500 and 1,800 meters above sea level on volcanic soils rich in organic matter. Combined with cool mountain temperatures and abundant water, these conditions allow for a slow and balanced cherry maturation that enhances aromatic complexity and sweetness in the cup.
Selective handpicking, flotation to remove defects, controlled fermentation, and careful drying preserve the variety's most elegant attributes. The result is a coffee that is expressive yet refined, offering vibrant floral aromatics, chocolate undertones, juicy malic acidity, and a clean, lingering finish.
More than a coffee, La Selva Chiroso is a reflection of a place where forest conservation, biodiversity, and specialty coffee coexist in perfect harmony.
